Whip up some traditional Thai dishes during a half-day cooking class at the Baan Hongnual Cooking School. The chefs have just the recipes for teaching you how to cook spicy or light Thai cuisine. Start with a well-equipped kitchen, add plenty of expertise, mix in food history and enthusiasm and you have the makings of a delicious and profound culinary experience.

You will be collected at your hotel and head to a local market. Learn how to select the best and freshest fish, meat and vegetables. Get an excellent primer on Thai herbs and spices. With your shopping bags filled, proceed to the school, which is located in an airy, teak structure constructed in the traditional Lanna architectural style.

The chefs guide you through the preparation of four traditional dishes, beginning with a briefer on the utensils and seasoning. The menu might include pad preaw waan, which is sweet and sour sea bass, or possibly yam wun send (jelly noodle salad). Then enjoy a guided tour of the school’s own herb and fruit garden. Feel and smell these primary ingredients, which are the lifeblood of the aromatic Thai cuisine. Then it’s back to the kitchen to prepare two more dishes, usually a curry and a typical dessert.
