Description of the tour
Your driver will pick you up from your accommodation in Bologna. Comfortably seated in the car, you will travel through the countryside of Emilia Romagna before reaching a producer of Parmesan cheese, the "King of Cheeses”. You will watch how one of the most delicious foods in the world is made today in the same way it was made eight centuries ago, using those same genuine ingredients, the skill and knowledge of cheese masters. At the end of the visit, you will savor authentic Parmiggiano-Reggiano of different ages.
You will continue on to an "acetaia”, a producer of traditional balsamic vinegar. Born centuries ago as a medicinal of exclusive use of kings and emperors and known as the "black gold", the traditional balsamic vinegar has found its place in the kitchen as a product of excellence. The owner himself will demonstrate how the authentic aceto balsamico tradizionale di Modena is made, spending years rotating through small barrels of various woods until it turns into a sublime, dark nectar. At the end of the tour, you will have a chance to sample not only the 12-year-old balsamic vinegar, but also some truly special 25-year-old vinegar.
Then you will visit a prosciutto di Parma (Parma Ham) producer where you will see the steps in making Italy’s most popular DOP ham, from salting and fatting to aging in cold storage. The visit will conclude with a delicious Parma Ham tasting.
At the end of the tour, you will enjoy a typical lunch at a family-run restaurant, accompanied by local wine.
